Since 2016, he has sharpened his palate whilst refining his craft across Europe, and deepened his culinary roots in Korea, expanding a knowledge of Korean cuisine that has been second nature since childhood.

Boasting almost a decade of living experience in South Korea, Subash owns a meticulous eye for detail and an uncompromising respect for ingredients. He champions the freshest meat and vegetables to deliver Korean food that is both elegant and boldly flavourful.
